Description
The chicken tenders are marinated in a mixture combining Dijon mustard, diced shallot, honey, olive oil, freshly chopped rosemary, lemon juice, salt, and pepper. This marinade infuses the chicken with bright, sweet, and herbal notes. Half the marinade is reserved to be brushed on during the final minutes of grilling for an additional flavor boost.
After marinating for at least two hours or up to eight for deeper flavor, the chicken is grilled over medium heat. The cook time is roughly 8 minutes, turning occasionally to ensure even cooking until the internal temperature reaches 165°F. The reserved marinade is applied near the end to add a glossy, flavorful glaze.
Serve these chicken tenders immediately after grilling, pairing well with salads, rice, or vegetables. The method allows flexibility for weekday meals or casual entertaining with a fresh, slightly sweet and savory profile.
Ingredients
- ¼ cup Dijon mustard coarse ground
- ½ shallot diced
- 3 tablespoons honey
- 2 tablespoons olive oil
- 2 tablespoons rosemary chopped, fresh
- 1 tablespoon lemon juice freshly squeezed
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- 1 ½ pounds chicken tenderloin
- 1 tablespoon canola oil
Instructions
- In a medium bowl, whisk together Dijon, shallot, honey, olive oil, rosemary, lemon juice, 1 teaspoon salt and 1/2 teaspoon pepper; set aside 1/2 of the mixture in the refrigerator until ready to serve.
- In a gallon size Ziploc bag or large bowl, combine chicken and Dijon mixture; marinate for at least 2 hours to overnight, up to 8 hours, turning the bag occasionally. Drain the chicken from the marinade.
- Preheat grill to medium heat.
- Brush chicken with canola oil; season with salt and pepper, to taste. Add chicken to grill, and cook, turning occasionally, until chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 8 minutes.
- Brush with reserved Dijon mixture, cooking for an additional 1-2 minutes.
- Serve immediately.
