Grilled Lamb Tacos
Description
These Grilled Lamb Tacos feature cubed lamb shoulder coated in a richly spiced paste combining smoked paprika, cumin, oregano, garlic puree, chipotle paste if desired, lime juice, salt, and black pepper. After marinating at least 30 minutes, the lamb is grilled on a hot flat plate, covered to evenly cook through, resulting in tender, flavorful meat with a slight char.
The grilled lamb pieces are served warm inside tortillas along with taco accompaniments of choice. The marinade adds smoky, earthy, and slightly spicy flavors balanced by acidity from lime juice. Cooking on the grill imparts a subtle smokiness and caramelization to the lamb's exterior.
These tacos offer a satisfying meat-forward meal. Selecting similar-sized lamb chunks ensures even cooking. Serving the tortillas warm enhances texture and overall eating experience.
The lamb can also be cooked indoors on a skillet; drain excess fat before serving. Portions align with 3 WW Blue Plan SmartPoints per serving on the Blue Plan.
