Grilled Lemon Chicken Skewers

These Grilled Lemon Chicken Skewers are so good and tender from a delectable marinade, and they're grilled on the grill or grill pan for a lunch or dinner recipe that is so full of flavor! Lemon, pepper, and honey are some of the elements that make up these grilled chicken kabobs.

Ingredients

  • 3 tablespoons olive oil
  • 2 lemons juiced and 1 zested
  • 2-3 garlic clove minced
  • 2 tablespoons fresh oregano minced, or 1 tsp dried oregano
  • 2 tablespoons honey
  • Kosher salt and ground pepper to taste
  • 4 chicken breasts large, skinless and boneless, cut into 2-inch pieces
  • Lemon wedges to serve
  • 8 soaked bamboo skewers

Instructions

  1. To a large bowl, add all the ingredients, besides the chicken and mix well.
  2. Next, add the chopped chicken and toss to get all pieces coated. Cover and marinate into the fridge for up to one hour.
  3. Thread the marinated chicken pieces onto the prepared skewers.
  4. Heat a grill pan or an outdoor grill over medium-high heat. Grill for 6-8 minutes in total, or until the chicken is fully cooked through.
  5. To the same preheated grill, add the lemon wedges. Grill for 1-3 minutes, or until grill marks appear.
  6. Serve the chicken skewers with grilled lemon wedges and enjoy!

Notes

  • Store the chicken kabob leftovers in an airtight container in the refrigerator for up to four days.
  • Feel free to use maple syrup in place of the honey.
  • Be sure to soak the bamboo skewers in water before threading with the chicken.
  • Make sure to use a meat thermometer to make sure the chicken is cooked all the way through.
  • Be careful not to leave this chicken in the marinade too long or the texture of the chicken will off.
