Grilled Lemon Chicken Wraps with Spicy Garlic Sauce

Grilled lemon chicken wraps feature marinated chicken pieces with lemon zest, garlic, and spices grilled on skewers. Served on flatbread with lettuce, tomato, and a creamy spicy garlic sauce made from mayonnaise, yogurt, garlic, and sriracha, this wrap balances tangy, savory, and spicy flavors with fresh vegetable crunch and soft flatbread.

Description

Chicken breast cut into cubes marinates in a bright mixture of olive oil, garlic, lemon zest and juice, salt, pepper, oregano, cumin, and paprika. After marinating, the chicken is threaded on skewers and grilled medium-high until cooked through with a slightly charred exterior. The spicy garlic sauce blends mayonnaise, Greek yogurt, garlic, sriracha, and lemon juice for a cool creamy topping. The wraps are assembled by layering fresh lettuce and tomato on flatbread followed by grilled chicken and a drizzle of the spicy sauce. The recipe suggests using homemade or store-bought flatbreads and adjusting garlic amounts to taste for stronger flavor.

Ingredients

Servings

Chicken + Wraps:

  • 2 pounds chicken breast cut into 1-inch pieces, boneless skinless
  • 2 tablespoons olive oil
  • 3 cloves garlic about 1 1/2 teaspoons or so, finely minced or pressed through a garlic press
  • 1 tablespoon lemon zest from about 1-2 lemons, fresh
  • 3 tablespoons lemon juice fresh
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon oregano dried
  • 1 teaspoon cumin ground
  • ½ teaspoon paprika
  • Bamboo or metal skewers for grilling
  • 4 to 6 to 6 flatbread or pita bread wraps (see note
  • 2 to 3 to 3 cups lettuce or baby spinach, spring mix
  • tomato sliced

Spicy Garlic Sauce:

  • ½ cup mayonnaise
  • ½ cup yogurt plain, Greek
  • 2 to 3 to 3 cloves garlic a heaping teaspoon, finely minced or pressed through a garlic press
  • 1-2 teaspoons sriracha more or less to taste, or hot sauce
  • ½ teaspoon salt
  • Pinch black pepper
  • lemon juice a couple teaspoons, fresh, squeeze of

Instructions

  1. For the chicken, place the cubed chicken in a flat dish or in a gallon ziploc bag.
  2. Whisk together the olive oil, garlic, lemon zest, lemon juice, salt, pepper, oregano, cumin and paprika. Pour over the chicken, toss to coat, and cover the dish (or seal the bag) and place in the refrigerator to marinate for at least an hour or up to 8 hours.
  3. Thread the chicken pieces on metal or bamboo skewers and grill on medium-high, flipping halfway, until the chicken is cooked through, about 6-8 minutes total.
  4. Let the chicken rest for 5 minutes before serving.
  5. For the garlic sauce, combine all the ingredients in a blender and process until smooth (you can also whisk together in a bowl). I like to pour the mixed sauce into a squeeze bottle for easy serving. Refrigerate until ready to serve; the sauce can be made a week ahead of time.
  6. To serve, place lettuce greens down the center of each wrap, followed by slices of tomato, grilled chicken and a healthy drizzle of spicy garlic sauce.

Notes

  • Store-bought flatbread or pita can be used instead of homemade for convenience.
  • Feel free to increase the garlic in the marinade and sauce for a bolder flavor.
