Grilled Lemon Pepper Chicken Wings
Description
This recipe starts with patting chicken wings dry for crispiness, then lightly coating them with avocado oil before applying a simple rub of salt, black pepper, and garlic powder. The wings are grilled over medium-high heat with frequent turning to develop an evenly crisp surface without burning. Cooking continues until wings reach 170°F internally, ensuring juiciness and safety.
The finishing sauce combines melted butter or ghee with fresh lemon juice, lemon zest, Dijon mustard, and cracked black pepper, which coats the wings after grilling, adding a sharp citrus tang balanced by buttery richness. The lemon flavor brightens the savory seasoned wings, creating a balanced taste profile.
This preparation is ideal for outdoor grilling sessions and serves well as a finger food or part of a casual meal where flavorful wings are welcome. The method ensures a crisp skin with tender meat inside and a layered lemon-pepper flavor.
Ingredients
- 2 lb chicken wings separated into flats and drumettes
- avocado oil spray
- 2 tsp black pepper 1 tsp for dry rub, 1 tsp for sauce, fresh cracked
- 2 tsp salt
- 1 tsp garlic powder
- 1/4 cup butter melted, or ghee
- 2 tbsp lemon juice fresh
- 1 tsp lemon zest
- 1 tsp Dijon mustard
Instructions
- Remove wings from the refrigerator and pat down with paper towels
- Spray lightly with avocado oil or brush on a light layer of oil with a food bush
- Combine 2 tsp salt, 1 tsp fresh cracked black pepper, 1 tsp garlic powder in a small bowl
- Season wings on all sides with the seasoning mixture
- Preheat grill to med-high heat
- Place seasoned wings on the warm grill - if your grill runs hot and you are seeing a lot of flames flare up, reduce the heat. We don't want to burn the wings
- Cook the wings for 15-20 minutes in a closed grill rotating every 3 minutes - the constant rotation will allow the skin to crisp without burning
- Remove the wings from the grill when the internal temp reaches 170F
- While the wings are still warm from the grill prepare the sauce by combining melted butter or ghee, lemon juice, lemon zest, dijon mustard and 1 tsp cracked pepper in a small bowl
- Toss the wings in this sauce and enjoy! You can use the excess sauce for dipping as you eat
