Grilled Lime Cilantro Chicken

Grilled Lime Cilantro Chicken features boneless, skinless chicken breasts marinated in a mixture of lime juice and zest, olive oil, honey, fresh cilantro, kosher salt, and black pepper. The marinade infuses bright citrus and herb notes, complementing the chicken's natural flavor. Grilling over medium-high heat cooks the chicken to juicy doneness with a slightly charred surface, suitable for casual dinners or adding to salads and tacos.

Description

This recipe uses thin-sliced boneless, skinless chicken breasts marinated at minimum one hour or overnight in a zesty blend of lime juice and zest, olive oil, honey, and fresh cilantro. The combination creates a balance of acidity, sweetness, and herbal freshness. Salt and pepper season the chicken evenly.

Preheating and oiling the grill prevents sticking while grilling over medium-high heat cooks the chicken for about 9 to 10 total minutes until done but still juicy. The citrus marinade imparts tang and the honey adds subtle sweetness that caramelizes slightly on the grill, producing a flavorful crust and tender interior.

The grilled chicken can be served immediately, garnished with extra cilantro and lime wedges. It fits well as a main protein alongside grilled vegetables, rice, or in wraps. Leftovers keep well refrigerated and can be repurposed for several days.

For storage, keep cooked chicken airtight in the refrigerator up to 5 days or freeze for 3 to 4 months.
