Ingredients
- 1 onion chopped, small; red variety
- 2 garlic chopped, cloves
- ⅓ cup coconut shredded, sweetened
- 2 TBS lime juice
- ⅓ cup cilantro chopped + more for garnish, fresh
- ¼ cup olive oil
- ⅓ cup soy sauce lower sodium
- 1 pound Shrimp peeled and deveined, large, raw
- 1 zucchini sliced in half and then into ½ inch moons
- 1 summer squash sliced in half and then into ½ inch moons
- 2 cups corn kernels (frozen is fine)
