Ingredients

  • 1 onion chopped, small; red variety
  • 2 garlic chopped, cloves
  • cup coconut shredded, sweetened
  • 2 TBS lime juice
  • cup cilantro chopped + more for garnish, fresh
  • ¼ cup olive oil
  • cup soy sauce lower sodium
  • 1 pound Shrimp peeled and deveined, large, raw
  • 1 zucchini sliced in half and then into ½ inch moons
  • 1 summer squash sliced in half and then into ½ inch moons
  • 2 cups corn kernels (frozen is fine)
  • aluminum foil heavy duty
