Description
This Grilled Mushrooms recipe features whole button mushrooms threaded onto skewers for easy handling over medium-high heat. They are brushed lightly with olive oil and seasoned simply with salt and pepper before grilling. Cooking for 4-5 minutes per side allows the mushrooms to soften and develop a slight char and rich savoriness.
A garlic butter made by melting butter and stirring in minced garlic and parsley is brushed onto the grilled mushrooms just before serving. This adds an aromatic, fresh complement that balances the mushrooms’ earthiness. The skewered form makes them convenient for cookouts or as part of a vegetable side dish.
The mushrooms can also be prepared indoors under a broiler with similar timing and results, making this recipe flexible for different cooking setups.
Ingredients
- 1 pound button mushrooms cleaned and trimmed
- 2 teaspoons olive oil
- salt to taste
- black pepper to taste
- 2 tablespoons butter
- 1 teaspoon garlic minced
- 2 teaspoons parsley minced
Instructions
- Preheat an outdoor grill or grill pan to medium high heat.
- Thread the mushrooms onto skewers. Brush with olive oil and sprinkle with salt and pepper.
- Place the skewers on the grill. Cook for 4-5 minutes per side or until mushrooms are tender and browned.
- Place the butter and garlic in a small bowl. Microwave in 30 second increments or until butter is melted. Stir in the parsley and salt and pepper to taste.
- Brush the garlic butter over the mushrooms, then serve.
Notes
- If an outdoor grill isn't available, broil the mushrooms in the oven for 4-5 minutes per side to achieve a similar texture and flavor.
