Grilled Pineapple
Description
The Grilled Pineapple recipe involves slicing a peeled and cored pineapple into 3/4 inch thick rings. These slices are brushed with a mixture of melted butter, light brown sugar, and ground cinnamon, which creates a sweet and mildly spiced glaze. The coated pineapple is cooked over medium heat on a grill or grill pan, allowing the sugar to caramelize and the fruit to soften without becoming mushy. The cooking time is short, about 2 to 3 minutes per side, to achieve golden brown grill marks and tender texture.
The grilled pineapple develops a balance of warm caramel notes from the sugar and butter, complemented by cinnamon’s subtle spice. Garnishing with fresh raspberries and mint adds fresh fruit sweetness and herbal brightness. The dish can be served immediately, offering a pleasing combination of smoky char, sweet glaze, and juicy fruit.
Using pre-cut pineapple or canned pineapple rings is acceptable if short on time or when fresh pineapple prep is difficult. Allow enough time on the grill without moving the fruit to get grill marks and caramelization. The garnishes are optional but enhance appearance and flavor.
Ingredients
- 1 pineapple peeled, cored and cut into 3/4 inch thick slices
- 1/4 cup butter melted
- 1/4 cup light brown sugar
- 1/4 teaspoon cinnamon
- cooking spray
- raspberries optional, fresh, for garnish
- mint optional, fresh, for garnish
Instructions
- Preheat a grill or grill pan to medium heat. Coat grill grates with cooking spray.
- In a small bowl, whisk together the brown sugar, butter and cinnamon.
- Brush the brown sugar mixture over both sides of each pineapple slice.
- Place the pineapple slices on the grill in a single layer. Cook for 2-3 minutes per side, or until golden brown and tender.
- Serve immediately, garnished with raspberries and mint if desired.
Notes
- Pre-cut or canned pineapple slices can be used as a convenient substitute for fresh pineapple.
- Allow pineapple slices to remain still on the grill long enough to develop grill marks before flipping.
- Fresh raspberries and mint add complementary color and flavor when served.
