Description
This recipe begins by creating a marinade combining brown sugar, soy sauce, minced garlic, fresh lime zest and juice, ginger, and optional hot sauce for heat. Pineapple juice drained from the rings is included to deepen the marinade's sweetness and acidity.
The chicken breasts marinate for at least 30 minutes, though longer refrigeration is suggested for greater flavor absorption. The grill is preheated and oiled to prevent sticking, then chicken is cooked about 5-8 minutes per side, being basted with reserved marinade to build glaze and moisture while reaching an internal temperature of 165°F.
Pineapple rings are grilled concurrently to develop char marks and caramelization, enhancing their natural sweetness and complementing the chicken. Serving the grilled chicken topped with warm pineapple slices creates a balance of savory and sweet elements.
Ingredients
- 4 chicken breast boneless and skinless
- 8 oz pineapple juice drained and reserved, canned rings
Marinade:
- 1/4 cup brown sugar light or dark
- 1/4 cup soy sauce low sodium
- 4 cloves garlic minced
- 1 lime zested and juiced
- 1 teaspoon ginger minced, fresh
- 1 teaspoon hot sauce optional
- 1/8 teaspoon black pepper ground
Instructions
- In a large bowl mix the marinade ingredients plus the reserved pineapple juice. Mix well until sugar is dissolved.
- Reserve 1/2 cup of marinade for later use and add the rest to a Ziploc bag.
- Place the chicken breasts into the marinade. Squeeze out the air, seal, and place in the refrigerator for 30 minutes or better overnight.
- Preheat the grill to 350 degrees F or preheat the grill pan over medium-high heat.
- Rub the grates with oil.
- Remove chicken breasts from marinade and shake off excess liquid. Arrange on the grill and cook for 5-8 minutes per side. While grilling, brush it a few times with the reserved marinade. Chicken breasts are cooked when the internal temperature reaches 165 degrees.
- While chicken is grilling arrange pineapple rings onto the grill and cook until lightly charred with grill marks.
- Arrange chicken on a platter, top with pineapple slices, and serve.
