Grilled Pizza

This Grilled Pizza recipe uses pizza dough brushed with olive oil, grilled directly over medium-high heat, then topped with tomato sauce, mozzarella, fresh basil, and seasonings before finishing on the grill. The grilling method imparts a lightly charred crust with a smoky flavor, while the cheese melts into a gooey topping. It suits those looking for a different pizza crust texture and outdoor cooking experience.

Description

Starting with pizza dough allowed to rise briefly at room temperature, the recipe involves portioning and rolling dough to the desired size and thickness. The dough is oiled and grilled first on one side until lightly golden with grill marks, then flipped off the grill for topping. The sauce, cheese, and herbs are added to the cooked side, and the pizza is returned to the grill over lowered heat to melt the cheese and crisp the bottom crust.

This grilling approach yields a crust with a crisp exterior and a slightly chewy interior, accompanied by a smoky undertone from the grill. Melting the cheese on the grill preserves a fresh flavor, complemented by the brightness of basil and optional crushed red pepper for subtle heat.

Grilled pizza can be customized with varying portions, toppings, or seasonings. Leftovers store well in an airtight container for several days and can be reheated in the microwave or toaster oven to preserve texture. The dough preparation emphasizes using quality store-bought dough and proper resting for best results.

Ingredients

Servings
  • 1 pound pizza dough
  • 4 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon oregano
  • 1 cup tomato sauce store-bought or homemade
  • 16 ounces mozzarella cheese 1 package, sliced
  • ¼ cup basil fresh
  • crushed red pepper for serving

Instructions

  1. Preheat the grill to medium-high heat. Allow store-bought dough to rise at room temperature for 20 minutes.
  2. Cut the pizza dough into 2 to 8 portions depending on how big and thick you want each pizza. Roll the dough into desired size and thickness and transfer to a parchment paper.
  3. Brush the olive oil on top of the pizza dough. Lift the pizza dough off the surface with the parchment paper below it and carefully flip it onto the grill, oil side down. Peel the parchment paper off.
  4. Cover and cook for 2-3 minutes and check for doneness with tongs to see if the bottom side has grill marks and is lightly golden. Flip the pizza(s) onto a plate and add sauce, seasoning and toppings to the cooked side.
  5. Lower the grill heat slightly and slide pizzas back onto the grill to cook the bottom side for another 3-5 minutes, until cheese is melted and bottom crust is golden.
  6. Use tongs to remove the pizza from the grill. Let cool for a few minutes and then slice.

Notes

  • Allow store-bought pizza dough to rest 20 minutes before shaping for easier handling.
  • Brush olive oil on dough before grilling to prevent sticking and promote crispness.
  • Monitor the dough closely on the grill to achieve golden grill marks without burning.
  • Store leftovers in an airtight container for 3-4 days and reheat using a microwave or toaster oven.
  • Feel free to customize seasonings and toppings according to preference while following the dough preparation steps.
