Grilled Pork Chops

Grilled Pork Chops marinated in a mixture of olive oil, brown sugar, soy sauce, lemon juice, and dried herbs develop a balance of savory, slightly sweet, and tangy flavors. The chops are grilled to medium doneness, allowing a hint of pink in the center with a caramelized exterior. Resting off the heat finishes cooking gently and preserves juiciness. This method highlights the pork's natural flavor enhanced by the marinade and grilling.

Description

In this recipe, pork chops are coated in a marinade featuring olive oil, brown sugar, soy sauce, lemon juice, garlic powder, basil, oregano, salt, and pepper. The acid and sugar promote tenderness and caramelization. After marinating at least two hours, the chops are grilled over medium-high heat for 5 to 6 minutes per side, aiming for an internal temperature of 145°F to maintain juiciness with a slightly pink center. Letting the pork rest after cooking allows juices to redistribute. Bone-in or boneless chops can be used, with bone-in preferred for flavor. The marinade can be modified by adding Dijon mustard for extra tang. Grilling times depend on thickness: thinner chops need less time, thicker ones need more. Avoid pressing or flipping the chops too soon to achieve a good sear and prevent sticking. This approach yields tender chops with a flavorful crust and balanced marinade taste.

Ingredients

Servings
  • 4-6 pork chops ¾-inch thick, bone-in

Marinade

  • ¼ cup olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • ½ lemon juiced, about 1 ½ tablespoons
  • ½ teaspoon garlic powder
  • ¼ teaspoon basil dried
  • ¼ teaspoon oregano dried
  • salt to taste
  • black pepper to taste

Instructions

  1. To make the marinade, in a large bowl or a freezer bag, combine olive oil, brown sugar, soy sauce, freshly squeezed lemon juice, garlic powder, basil, oregano, along with 1 teaspoon salt and ½ teaspoon black pepper.
  2. Add the pork chops and toss well to coat. Marinate for at least 2 hours, turning occasionally.
  3. Preheat the grill to medium-high.
  4. Remove the pork from the marinade, allowing any excess to drip off.
  5. Grill the pork chops for 5-6 minutes per side or until they reach an internal temperature of 145°F with an instant-read thermometer. Do not overcook.
  6. Let the pork chops rest on a plate for at least 5 minutes before serving.

Notes

  • Bone-in pork chops give more flavor, but boneless can be used.
  • For added tang, incorporate 1 teaspoon Dijon mustard into the marinade.
  • Adjust grilling times based on chop thickness: 4 minutes per side for ½-inch, 5–6 minutes per side for ¾-inch, and 7–9 minutes per side for 1-inch thickness.
  • Use an instant-read thermometer for best doneness; remove chops at 140°F as they will rest to 145°F.
  • Let chops develop color on one side without pressing or flipping too soon to prevent sticking.
