Description
The pork chops are first soaked in a brine containing kosher salt, honey, apple cider vinegar, bay leaves, smashed garlic cloves, black peppercorns, fresh rosemary, and lemon slices for 8 to 12 hours. This brining infuses flavor while helping to keep the meat moist during grilling.
Once brined, the chops are patted dry and coated with a spice mixture of garlic powder, onion powder, paprika, salt, and black pepper. They are grilled on a hot grill preheated to around 450°F, cooking about 4 to 5 minutes per side to reach an internal temperature of 145°F. Resting the chops after grilling allows the juices to redistribute, enhancing tenderness and flavor.

Ingredients
Pork Chop Brine:
- 4 pork chop bone-in thick center cut or none in
- 1/2 gallon water
- 1/2 cup kosher salt*
- 1/2 cup honey
- 1 tablespoon apple cider vinegar
- 2 bay leaves dried
- 4 cloves garlic peeled and smashed
- 2 teaspoons black peppercorns whole
- 3 rosemary fresh sprig
- 1 lemon sliced
Grilled Pork Chops:
- 2 tablespoons extra virgin olive oil or canola oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons paprika
- 2 teaspoons salt
- 1 teaspoon black pepper
Instructions
- Combine all the brine ingredients in a large bowl, add pork chops, cover and brine for 8 to 12 hours for best results.
- Heat grill to about 450 degrees Fahrenheit, brush it well with olive or canola oil.
- Discard the brine, pat dry the chops well with paper towels.
- In a shallow bowl, combine garlic powder, onion powder, paprika, salt and pepper. Brush the pork chops with olive oil, toss into the mixture on both sides.
- Grill the chops about 4 to 5 minutes per side or until no longer pink in the middle and the internal temperature is 145 degrees F.
- Let rest 5 to 10 minutes before serving.
