Once brined, the chops are patted dry and coated with a spice mixture of garlic powder, onion powder, paprika, salt, and black pepper. Pork Chop Brine:

  • 4 pork chop bone-in thick center cut or none in
  • 1/2 gallon water
  • 1/2 cup kosher salt*
  • 1/2 cup honey
  • 1 tablespoon apple cider vinegar
  • 2 bay leaves dried
  • 4 cloves garlic peeled and smashed
  • 2 teaspoons black peppercorns whole
  • 3 rosemary fresh sprig
  • 1 lemon sliced

Grilled Pork Chops:

  • 2 tablespoons extra virgin olive oil or canola oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons paprika
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. Combine all the brine ingredients in a large bowl, add pork chops, cover and brine for 8 to 12 hours for best results.
  2. Heat grill to about 450 degrees Fahrenheit, brush it well with olive or canola oil.
  3. Discard the brine, pat dry the chops well with paper towels.
  4. In a shallow bowl, combine garlic powder, onion powder, paprika, salt and pepper. Brush the pork chops with olive oil, toss into the mixture on both sides.
  5. Grill the chops about 4 to 5 minutes per side or until no longer pink in the middle and the internal temperature is 145 degrees F.
  6. Let rest 5 to 10 minutes before serving.
