Grilled Pork Chops Recipe with Carolina Gold BBQ Sauce

This recipe features thick center-cut pork loin chops marinated in a mustard-based blend with garlic, cayenne, and cilantro, then grilled and glazed with a tangy Carolina Gold BBQ sauce rich in mustard, honey, apple cider vinegar, and spices. The grilling method provides charred grill marks and smoky flavor, balanced by the sweet and tangy sauce layered during cooking and served warm.

Description

The Grilled Pork Chops recipe calls for thick pork loin chops marinated in a mixture of yellow mustard, white wine vinegar, lemon juice, minced garlic, cayenne pepper, and chopped cilantro. After marinating for at least two hours, the chops are grilled over medium-high heat to create flavorful grill marks. The accompanying Carolina Gold BBQ sauce is a mustard-forward blend including honey, apple cider vinegar, brown sugar, ketchup, Worcestershire sauce, garlic powder, salt, and a dash of hot sauce, which is mopped onto the chops during the final grilling stage, adding layers of tangy sweetness.

The cooking process involves an initial high-heat sear to develop crust and grill marks, then finishing over lower heat while basting with sauce until the chops reach an internal temperature of at least 145°F. This method helps keep the meat juicy while infusing it with the characteristic mustard and vinegar flavors of Carolina BBQ. After resting briefly, the chops are served with the warmed sauce, which complements the pork without overpowering it.

This dish is suitable for serving as a hearty main course, with traditional barbecue accompaniments or simple sides. The marinade and sauce impart bold flavor notes that highlight the pork's natural taste while creating a balanced, savory-sweet profile. Leftover barbecue sauce keeps well refrigerated for future use.
