For the Kabobs:

  • 3 pounds pork tenderloin
  • 2 zucchini
  • 1 red onion large
  • 2 red bell pepper large

For the Marinade:

  • 1 Tablespoon Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 Tablespoon olive oil
  • 1 lemon juiced

Instructions

  1. Whisk together the marinade ingredients in a medium size bowl. Then cut the pork into approximately 2 inch size pieces and place it in the bowl with the marinade. Cover and refrigerate for at least 1 hour or up to 4 hours to let the pork marinate.
  2. While the pork is marinading, cut the red onion and bell peppers into 2 inch pieces and slice the zucchinis into 1 inch slices. Also, soak the wooden skewers in water for at least 30 minutes to prevent them from burning while grilling.
  3. Skewer the marinaded pork and vegetables onto the wooden skewers. Then preheat a grill over medium high heat (approximately 400 degrees F).
  4. Place the kabobs on the hot grill and cook for approximately 6-8 minutes (until the pork reaches an internal temperature of 145 degrees F and the vegetables are tender) turning the kabobs approximately every 2 minutes to prevent them from burning.
  5. Carefully remove from the grill and serve immediately.
