Ingredients

  • 1 1/4 lb /4 lb pork tenderloin trimmed
  • 1 tablespoon olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon oregano Use 1 teaspoon dried oregano if you don't have fresh oregano, minced, fresh
  • 1 1/2 /2 teaspoons garlic minced
  • 1/2 /2 teaspoon kosher salt coarse
  • 1/4 /4 teaspoon black pepper freshly ground

Instructions

  1. Heat the gas grill to medium-high heat and oil the grill grates.
  2. On a cutting board, cut pork crosswise with a sharp knife into 1/4 inch thick diagonal slices.
  3. Combine olive oil and next 5 ingredients, rub over pork, coating well.
  4. Grill pork 1 to 2 minutes on each side on the preheated grill or until done and internal temperature has reached 145 degrees F. Let the  pork rest a few minutes. Serve immediately. Don't overcook.
