Description
This recipe begins by whisking olive oil, balsamic vinegar, Italian seasoning, and garlic powder to create a simple marinade. Portobello mushroom caps are gently coated and seasoned with salt and black pepper, allowing the flavors to infuse briefly—no more than ten minutes to prevent sogginess. Grilling over medium heat, the mushrooms cook first cap side down to develop a sear, then flipped until tender and beautifully caramelized.
The texture is meaty and moist, accented by the tangy balsamic glaze and smoky grilled flavor. Serving immediately after grilling retains texture and warmth. Fresh parsley adds a bright herbaceous note that complements the rich mushrooms.
These mushrooms can accompany main dishes or serve as a vegetarian entrée. Their hearty texture and bold flavor also work well as burger replacements or grilled vegetable sides.
Marinate portobellos only briefly to avoid overabsorption and sogginess from the balsamic vinegar.
Ingredients
- 4 portobello mushrooms stalks removed, wiped clean
- 3 tablespoons olive oil plus more for greasing grates
- 2 tablespoons balsamic vinegar
- ½ teaspoon Italian seasoning
- ½ teaspoon garlic powder
- salt
- black pepper
- parsley for serving, chopped
Instructions
- In a large bowl, whisk together the olive oil, balsamic vinegar, Italian seasoning and garlic powder. Add the portobello mushrooms to the bowl and gently toss with the marinade, then season with salt and pepper. Use a brush to coat the marinade all over the mushrooms.
- Preheat grill or grill pan to medium heat. Coat grill grates with olive oil.
- Place the mushrooms on the grill in a single layer cap side down. Grill for 8 minutes, then flip over and grill until knife tender and caramelized, about 4-6 more minutes.
- Serve immediately with fresh parsley, if desired.
Notes
- Do not marinate portobello mushrooms for longer than 10 minutes to prevent them from becoming soggy from the balsamic vinegar.
