Grilled Potatoes in Foil

Report
Grilled Potatoes in Foil involves slicing russet potatoes and onions, seasoning them with salt and pepper, and adding butter before sealing in foil packets. Cooking on a grill softens the potatoes and infuses them with a gentle smoky flavor, offering a tender and buttery side dish that pairs well with various main courses.

Description

This recipe takes russet potatoes peeled and thinly sliced along with sliced onions, then seasons them simply with salt and black pepper. Butter is added to each foil packet, which is carefully sealed to trap moisture during cooking. Grilling the packets over medium-high heat for 30 to 40 minutes gently steams the potatoes and onions until tender and infused with butter.

The technique of cooking in foil reduces the risk of drying out and allows the ingredients to meld flavors. The result is soft potatoes accented by sweet and mild grilled onions, complemented by a melt of butter throughout.

This side dish is a straightforward, satisfying accompaniment for grilled or roasted meats, bringing a rustic flavor while being easy to prepare on an outdoor grill.

The notes mention an alternative cooking method: baking the foil packets in a 375°F (190°C) oven for 40 to 45 minutes, which is a practical option when a grill is unavailable.

Ingredients

Servings
  • 6 russet potato
  • 1 onion
  • 6 Tbsp butter
  • 1 1/2 tsp salt
  • 1 1/2 tsp black pepper

Instructions

  1. Peel the potatoes and slice into 1/4” thick slices.
  2. Peel and thinly slice the onion.
  3. Place foil on the counter and spray with a non-stick cooking spray. I used 1 piece of foil per each potato.
  4. Place the potatoes and onion slices on the foil.  Season each packet with approximately 1/4 tsp of the Salt and Pepper and top with 1 Tablespoon of the butter.
  5. Fold each foil packet close and seal tightly.
  6. Grill over medium-high heat for 30-40 minutes until the potatoes are soft.
  7. Remove the heat, be careful when opening the foil packet and enjoy!

Notes

  • The foil packet method seals moisture, keeping potatoes tender and flavorful.
  • You can bake the packets in a 375°F oven for 40-45 minutes if you don't have access to a grill.
