Instructions

  1. Wash potatoes and cut into bite size pieces. Place in a microwave safe bowl and cover tightly with plastic wrap. Microwave for 3-4 minutes or just until fork tender.
  2. Preheat grill to medium-high heat.
  3. Add seasonings to the potatoes. Toss to coat.
  4. Lay out a sheet of heavy duty aluminum foil approximately 2 feet in length. Spray with cooking spray.
  5. Add the potatoes, onions & garlic on one half of the foil and top with butter. Fold the other half of the foil over top. Roll the edges of the foil on all sides to create a tight seal.
  6. Place the potatoes on the grill and cook 25-30 minutes, turning occasionally. Cook until the potatoes are tender and golden brown.
  7. Serve warm with sour cream or desired toppings.

Notes

  • Cook the potatoes part way by placing them in the microwave or boiling just until fork tender. This keeps the grill time short. If microwaving, no water is needed.
  • Use heavy-duty foil for the best results.
  • Other vegetables can be added to the mixture.
  • Potatoes can be skewered and cooked directly on the grill over indirect heat if you'd prefer. If using wood skewers, be sure to soak them in water for 30 minutes before grilling.
  • This potato foil packet recipe can also be cooked in the oven at 400°F. Bake for about 30 minutes.
  • Garnish with parsley and serve with sour cream or homemade ranch for dipping.
