Description
This recipe involves marinating thick-cut salmon chunks in a mixture of pineapple and orange juices, soy sauce, brown sugar, rice vinegar, sesame oil, garlic, liquid smoke, and seasonings. Marinating overnight allows the fish to absorb the tangy, sweet, and smoky flavors deeply. Ingredients
Grilled Salmon Kebabs Ingredients:
- 2 lbs salmon filet cut into 1 1/2" thick pieces
- 1 pineapple cut into 1 1/2" thick pieces
- 1 purple onion cut into 1" pieces
- 2 lemon sliced, plural
For the Fish Marinade:
- 1/2 cup pineapple juice
- 1/2 cup orange juice
- 1 tablespoon orange zest
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 2 teaspoons sesame oil
- 4 cloves garlic minced
- 1 teaspoon liquid smoke
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Add all marinade ingredients to a medium bowl and whisk to combine.
- Place salmon pieces into a large mixing bowl and pour marinade over meat. Stir to combine, cover and refrigerate overnight, stirring once or twice while marinating. Allow marinating for at least 6-8 hours.
- Skewer marinated salmon along with the sliced onion and pineapple, alternating them on the skewer.
- Grill kebabs over med/high heat for about 8-10 min or until the desired doneness is reached, rotating every 2-3 min for even grilling.
- Remove kebobs from the grill and let them rest at least 5 min before serving.
- Garnish with parsley and serve with tartar sauce.
