Grilled Salmon with Hazelnut Butter

Ingredients

  • 1 pound salmon
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoon hazelnut finely chopped
  • 3 tablespoon butter softened
  • 1 tablespoon parsley chopped, fresh
  • 1 tablespoon lemon juice

Instructions

  1. Prepare hazelnut butter – toast hazelnuts in the microwave or oven. Mix hazelnuts with butter, parsley, and lemon juice.
  2. Sprinkle both sides of fish with salt and pepper. Grill fish for 4 minutes. Turn – spread about 1 tablespoon hazelnut butter over each fillet. Cover and grill 4 to 6 minutes longer or until fish flakes easily with fork.

  • I didn’t grill my fish – I just broiled it in the oven.
