Description
This recipe involves coating large sea scallops in a lemony marinade with olive oil, garlic, salt, pepper, and Italian seasoning. The brief marination time, no longer than two hours, preserves scallop texture without beginning to 'cook' them in the lemon juice. Scallops can be threaded on skewers for ease or grilled loose if large enough.
Grilling is done over medium-high heat, cooking each side 1-2 minutes until the scallops turn opaque and firm. The result is scallops with a slight char and tender interior, complemented by fresh parsley and served with lemon wedges to brighten the flavor even more.
This versatile dish works well as an appetizer or main course and suits outdoor grilling or indoor grill pan preparation. The fresh and zesty marinade highlights the scallops’ natural sweetness.
Ingredients
- 1 1/4 pounds sea scallops large
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 teaspoons garlic minced
- 1 tablespoon parsley chopped
- lemon wedges for serving
Instructions
- Place the olive oil, lemon juice, salt, pepper, Italian seasoning and garlic in a large bowl or resealable plastic bag. Stir to combine the ingredients.
- Add the scallops to the bag or bowl. Toss to coat evenly with the marinade. Seal the bag or cover the bowl.
- Refrigerate and marinate for at least 15 minutes or up to 2 hours. You don't want to marinate for longer than that, as the acid in the lemon juice will start to cook the scallops.
- Thread the scallops onto skewers. This is optional, if you have very large scallops you can skip the skewers and toss them directly onto the grill.
- Heat an outdoor grill or indoor grill pan over medium high heat.
- Place the skewers or loose scallops on the grill. Cook for 1-2 minutes on each side or until scallops are firm and opaque.
- Sprinkle with parsley and serve with lemon wedges.
Notes
- Thread small to medium scallops on skewers for easier grilling; large scallops can be grilled without skewers.
- Marinate scallops for at least 15 minutes but not more than 2 hours to avoid lemon juice ‘cooking’ them.
- Suitable for outdoor grills and indoor grill pans.
