Grilled Shrimp Skewers
Description
This recipe features large peeled and deveined shrimp marinated briefly in olive oil, lemon juice, garlic, salt, black pepper, and Italian seasoning. The acidity of the lemon juice both flavors and lightly tenderizes the shrimp, but the marinating time is kept short to avoid partially cooking them in the marinade. After marinating, the shrimp are threaded onto skewers for even cooking.
The skewers are then grilled or broiled for just 2 to 3 minutes per side until the shrimp turn pink and opaque, which ensures they remain juicy and tender without drying out. Sprinkling chopped fresh parsley at the end adds a fresh herb note. Serving with lemon wedges allows for additional brightness on the plate.
These grilled shrimp skewers are an easy, healthy choice that pairs well with salads, rice, or grilled vegetables and work equally well as appetizers or main dishes.
