Ingredients

Servings

Avocado Slaw

  • 8 ounces coleslaw mix
  • 1/4 cup guacamole
  • 3 tablespoons yogurt plain, Greek
  • 1 lime juiced
  • 1 tablespoon cilantro chopped
  • kosher salt fresh ground, to taste
  • black pepper fresh ground, to taste

Mango Salsa

  • 2 Mango peeled and diced
  • 1/3 cup red onion diced
  • 1/4 cup cilantro leaves chopped, packed
  • 1 lime juiced
  • 1/4 teaspoon chili powder
  • kosher salt fresh ground, to taste
  • black pepper fresh ground, to taste

Shrimp

  • 1 pound Shrimp peeled and deveined, large, raw
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cumin
  • kosher salt fresh ground, to taste
  • black pepper fresh ground, to taste
  • 8 corn tortillas

Instructions

Avocado Slaw

  1. In a large bowl whisk together the guacamole, Greek yogurt, lime juice, cilantro, salt and pepper.
  2. Add in the coleslaw mix and stir together until thoroughly coated. Cover and refrigerate until ready to serve.

Mango Salsa

  1. Combine all of the ingredients for the mango salsa together in a medium sized bowl and stir together until combined. Cover and refrigerate until ready to serve.

Shrimp

  1. Preheat grill to medium high and oil the grill grates.
  2. In a large bowl toss together the shrimp with the spices until coated then thread them onto skewers.
  3. Grill the shrimp for approximately 1-2 minute per side or until pink and starting the curl.

Assembling

  1. Grill the corn tortillas until slightly charred and crisp around the edges.
  2. Place approximately 4 of the shrimp into each tortilla.
  3. Top with the avocado slaw and mango salsa and serve immediately.
