Ingredients

  • 1 ½ pounds (680g) sirloin steak or other cut of your choice
  • 1 tablespoon steak seasoning
  • salt to taste
  • Chimichurri optional, for serving

Instructions

On the Grill Or Grill Pan

  1. Remove steak from the fridge half an hour before grilling and allow to come up to room temperature.
  2. Preheat grill or grill pan to high.
  3. Season both sides of the steak with salt and steak seasoning. 
  4. Grill steak over direct heat for 4 to 5 minutes per side if you want it medium-rare.
  5. Let it rest for 5 minutes, so the juices redistribute.
  6. Slice and serve with chimichurri if you desire.

Grill It In The Instant Pot Using The Air Fryer Lid

  1. Put seasoned steak in the air fryer basket inside the Instant Pot.
  2. Plug in your air fryer lid on your instant pot, press air fry button and set to 400F / 204C for 12 minutes.
  3. Halfway through cook time, open the lid and flip the steak.
  4. When done, open the lid, check temperature, remove the steak (if done) and let rest.
  5. If not done enough, then cook for another 2-3 minutes.

Notes

  • How Long To Cook Steak
  • How long to cook steak on the grill depends entirely on the cut and how well done you want it. Below is a guide on how long to cook some common cuts of steak for medium rare. You will need to cook it for a few minutes less for rarer, and a few minutes more for well done. Check the temperature of the meat using a fast-read thermometer. It should read between 130-135F / 54-57C for medium rare.
  • Make sure your steak is dry before you cook it as dry meat forms the best crust.
  • I like to keep some fat on the steak when cooking for extra flavor.
  • For the best results cook your steak from room temperature. So if refrigerated take out and let rest for 30 minutes at room temperature. The colder the meat, the longer it will need to cook which can mean overcooking.
  • Season meat just before grilling. If you season ahead of time the seasoning will draw out moisture.
  • Sirloin steaks can dry out quickly if overcooked, so keep a close eye on them during cooking.
  • Season generously. If using only salt plan for about 1 teaspoon per pound of meat. If using steak seasoning you can start with 2 teaspoons per pound.
  • Slice the steak against the grain before serving.
  • Make sure the grill grates and grill pan is clean and lightly oiled if you can for the best cooking results.

  • Sirloin steak - 5 to 6 minutes per side over direct heat for medium-rare.
  • Ribeye - 4 to 6 minutes per side over direct heat for medium-rare.
  • Flank steak - 4 to 6 minutes per side over direct heat for medium-rare.
  • Filet mignon - 5 to 6 minutes per side over direct heat for medium-rare.
  • Tri-Tip - 4 to 6 minutes per side over direct heat, then cook over direct heat until it reaches the temperature you desire.
