Grilled Tiger Cry Beef

Grilled Tiger Cry Beef features thinly sliced sirloin or ribeye steak skewered and grilled, basted frequently with a tangy, spicy sauce made from tamarind, fish sauce, lime juice, sugar, and chili flakes. The result is a flavorful, tender grilled meat served with extra sauce for dipping.

Description

This recipe uses thin slices of steak threaded onto skewers and grilled over medium-high heat. The meat is basted repeatedly with a complex sauce that combines reconstituted tamarind paste, fish sauce, fresh lime juice, sugar, garlic, and Thai chili flakes. A portion of chopped green onions and cilantro adds fresh herbal notes to the sauce.

The quick grilling method provides a tender, slightly charred exterior while the frequent basting layers on a balance of sour, sweet, salty, and spicy flavors unique to the tamarind and fish sauce combination. The reserved sauce served alongside adds moisture and extra depth to each bite.

This dish is best served warm as a concentrated flavor highlight during a meal and pairs well with rice or simple vegetables to balance the bold flavors.
