Grilled Tomatoes

These Grilled Tomatoes are beefsteak tomatoes halved and grilled to develop smoky flavors and tender flesh while maintaining shape. Marinated in olive oil with garlic powder, salt, and pepper, the tomatoes are cooked cut side down first, then flipped to soften the skin side. A fresh parsley garnish adds brightness before serving.

Description

The tomatoes are prepared by cutting them crosswise into thick slices to retain their structure during grilling. Tossing them in an olive oil marinade with garlic powder, salt, and black pepper ensures even seasoning and prevents sticking. The grill is preheated to high heat and oiled to produce grill marks and prevent the tomatoes from falling through the grates.

  • 4 beefsteak tomato cut widthwise (cut along their equators, not pole to pole
  • 2 tablespoons olive oil plus more for greasing grates
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • parsley for serving, chopped

Instructions

  1. In a large bowl, whisk together the olive oil, garlic powder, salt and pepper. Add the tomatoes to the bowl and gently toss with the marinade.
  2. Preheat grill or grill pan to high heat. Coat grill grates with olive oil.
  3. Place tomatoes, cut side down, onto the preheated grill. Grill for 5 minutes with the lid closed, then use a spatula to carefully flip the tomatoes skin side down on the grill and cook with the lid open for 2-3 minutes. Use a spatula to carefully remove the tomatoes off the grill.
  4. Serve immediately with fresh parsley, if desired.

Notes

  • Use firm tomatoes to avoid them falling through the grill grates and losing shape while cooking.
