Grilled Vegetable Lo Mein
Report
Fresh vegetables are tossed in an Asian marinade, grilled, then mixed with Lo Mein noodles and a simple Asian sauce for an easy summer vegetarian dinner!

Ingredients
Grilled Vegetables
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tsp fresh ginger grated
- 1 tsp fresh garlic crushed
- 1 tsp steak seasoning
- 1 tsp sesame oil
- 1 zucchini sliced
- 1 yellow squash sliced
- 1 Japanese eggplant sliced
- 8 oz baby bella mushrooms
Noodles and Sauce
- ¼ cup soy sauce
- 1 tbsp Sriracha
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp chili paste
- 3 cloves garlic crushed
- 1 tsp freshly grated ginger
- 1 tsp sesame oil
- 10 oz Lo Mein Noodles or Spaghetti Noodles, if Lo Mein can’t be found
Instructions
Grilled Vegetables
- In a large bowl, whisk the soy sauce, rice vinegar, ginger, garlic, steak seasoning and sesame oil together.
- Toss in the zucchini, yellow squash, Japanese eggplant and baby bella mushrooms.
- Heat a grill, or grill pan, over medium heat.
- Once hot, add the veggies to the grill, and grill for 3-4 minutes, flip and grill for an additional 3-4 minutes.
- Remove from the grill and set aside on a large cutting board.
Noodles and Sauce
- Bring a large pot of water to boil.
- While waiting for the water to boil, combine all of the ingredients under “Noodles and Sauce”, except the Lo Mein noodles, in a medium mixing bowl, set aside.
- Add the noodles to the boiling water and cook according to package directions.
- Remove the noodles from the water, drain and place back in the pot on the stovetop over low heat. Add the sauce and toss with the noodles.
- Chop the veggies and add to the noodles and sauce.
