Grilled Vegetable Lo Mein

Fresh vegetables are tossed in an Asian marinade, grilled, then mixed with Lo Mein noodles and a simple Asian sauce for an easy summer vegetarian dinner!

Ingredients

Grilled Vegetables

  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp fresh ginger grated
  • 1 tsp fresh garlic crushed
  • 1 tsp steak seasoning
  • 1 tsp sesame oil
  • 1 zucchini sliced
  • 1 yellow squash sliced
  • 1 Japanese eggplant sliced
  • 8 oz baby bella mushrooms

Noodles and Sauce

  • ¼ cup soy sauce
  • 1 tbsp Sriracha
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp chili paste
  • 3 cloves garlic crushed
  • 1 tsp freshly grated ginger
  • 1 tsp sesame oil
  • 10 oz Lo Mein Noodles or Spaghetti Noodles, if Lo Mein can’t be found

Instructions

Grilled Vegetables

  1. In a large bowl, whisk the soy sauce, rice vinegar, ginger, garlic, steak seasoning and sesame oil together.
  2. Toss in the zucchini, yellow squash, Japanese eggplant and baby bella mushrooms.
  3. Heat a grill, or grill pan, over medium heat.
  4. Once hot, add the veggies to the grill, and grill for 3-4 minutes, flip and grill for an additional 3-4 minutes.
  5. Remove from the grill and set aside on a large cutting board.

Noodles and Sauce

  1. Bring a large pot of water to boil.
  2. While waiting for the water to boil, combine all of the ingredients under “Noodles and Sauce”, except the Lo Mein noodles, in a medium mixing bowl, set aside.
  3. Add the noodles to the boiling water and cook according to package directions.
  4. Remove the noodles from the water, drain and place back in the pot on the stovetop over low heat. Add the sauce and toss with the noodles.
  5. Chop the veggies and add to the noodles and sauce.
