Grilled Watermelon

This grilled watermelon recipe is such a fun summer side dish! If you don't have Green Tabasco Sauce on hand, season the corn topping with fresh lime juice and diced jalapeños.

Ingredients

Servings
  • cups corn raw kernels
  • ½ cup red onion diced
  • ½ cup red bell pepper diced
  • 1 garlic minced, clove
  • sea salt heaping ¼ teaspoon
  • 4 teaspoons Tabasco green sauce
  • 6 watermelon 1.5-inch wedges
  • cooking spray for the grill
  • ½ cup feta cheese crumbled
  • 1 avocado diced, small
  • mint or basil leaves
  • lime optional, wedges

Instructions

  1. Preheat a grill to medium high heat.
  2. In a medium bowl, combine the corn, onion, red pepper, garlic, salt, and the Tabasco Green Sauce. Chill until ready to use.
  3. Spray the grill grates with cooking spray and grill the watermelon 2 to 3 minutes per side or until char marks form.
  4. Remove and let cool a few minutes, then top with the corn mixture, the feta, avocado, and fresh herbs. Serve with more tabasco or lime wedges on the side, if desired.

Notes

  • *You can substitute this ingredient with 1 tablespoon fresh lime juice plus 1/2 diced jalapeño.
