Description
This recipe prepares slices of watermelon about 1-2 inches thick, coated lightly with extra virgin olive oil to promote even grilling and prevent sticking. Grilling over medium-high direct heat for 3-4 minutes per side creates attractive char marks and concentrates the watermelon’s sugars through caramelization. After grilling, the steaks are seasoned with flaky sea salt (Maldon) and freshly ground black pepper to enhance flavor.

Ingredients
- 8 inches watermelon 1-2 thick, wedges
- 3 tablespoons extra virgin olive oil
- 1 tablespoon sea salt Maldon
- 1 teaspoon black pepper freshly ground
- 2 tablespoons balsamic glaze
- 2 tablespoons feta cheese , crumbled
- 2 tablespoons basil cut into thin strips, fresh

Instructions
- Baste watermelon slices with extra virgin olive oil.
- Preheat grill to medium-high heat, cleaning and oiling grates.
- Place watermelon slices on to direct heat, leaving in place to get grill marks and a good caramelization. Grill for approximately 3-4 minutes on each side.
- Remove from the grill and season with Maldon sea salt, freshly ground black pepper, drizzle with balsamic reduction, crumbled feta cheese and fresh basil.
