Description

This recipe prepares slices of watermelon about 1-2 inches thick, coated lightly with extra virgin olive oil to promote even grilling and prevent sticking.   • 8 inches watermelon 1-2 thick, wedges
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon sea salt Maldon
  • 1 teaspoon black pepper freshly ground
  • 2 tablespoons balsamic glaze
  • 2 tablespoons feta cheese , crumbled
  • 2 tablespoons basil cut into thin strips, fresh

Optional Pairings

  • prosciutto
  • mozzarella cheese

Instructions

  1. Baste watermelon slices with extra virgin olive oil.
  2. Preheat grill to medium-high heat, cleaning and oiling grates.
  3. Place watermelon slices on to direct heat, leaving in place to get grill marks and a good caramelization. Grill for approximately 3-4 minutes on each side.
  4. Remove from the grill and season with Maldon sea salt, freshly ground black pepper, drizzle with balsamic reduction, crumbled feta cheese and fresh basil.
