Grilled Zucchini
Description
This recipe highlights zucchini sliced lengthwise into thin strips, allowing quick grilling that softens the vegetable without turning it mushy. Tossing slices in olive oil combined with Italian seasoning, garlic powder, onion powder, and kosher salt provides layers of warm herb and mild savory flavor. Grilling at medium-high heat for 2 to 3 minutes per side develops light char marks and softens the zucchini to a fork-tender texture.
Once cooked, squeezing fresh lemon juice adds a bright acidity that balances the seasoning and oiliness. Sprinkling Parmesan cheese contributes a nutty, salty element that complements the grilled flavors. For optional garnish, fresh basil lends a fresh, aromatic lift suitable for serving alongside grilled meats or as a simple vegetable side.
If desired, grilling lemon halves before squeezing enhances the citrus’s smoky complexity. This technique makes an easy, flavorful side that benefits from quick preparation and fresh ingredients.
Ingredients
- 2 zucchini sliced thinly lengthwise, small
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon onion powder
- 1 lemon halved, grilled or plain, fresh
- 1/4 cup Parmesan Cheese grated
- basil for topping, optional, fresh, sliced
Instructions
- Preheat the outdoor grill to medium-high heat or heat an indoor grill pan to medium-high heat.
- Add zucchini to a large mixing bowl or serving platter and toss with olive oil, Italian seasoning, garlic powder, kosher salt, and onion powder.
- Toss to combine and get each slice of zucchini evenly coated with oil and spices.
- Add the zucchini slices to the preheated outdoor or indoor grill. Grill on each side for 2-3 minutes depending on the thickness of your zucchini slices. You're looking for the zucchini to be fork-tender but not mushy.
- Remove from the grill, squeeze lemon juice over the zucchini, and sprinkle with grated Parmesan cheese.
- If you have fresh basil on hand feel free to sprinkle some chopped basil overtop.
Notes
- Grill lemon halves before squeezing to add a smoky citrus flavor.
- Thinly slicing zucchini ensures even cooking and prevents mushiness.
- Use fresh basil as topping if available to brighten the dish.
