Description

This Ground Beef and Broccoli recipe starts by prepping a cornstarch slurry and combining other sauce ingredients—beef broth, soy sauce, brown sugar, honey, garlic, ground ginger, and toasted sesame oil. The broccoli is sautéed until slightly tender and set aside. Ground beef and diced onions are cooked until browned, then red bell pepper is added briefly.

The sauce mixture is added, brought to a boil and reduced briefly before the cornstarch slurry is stirred in to thicken the sauce. Once thickened, the broccoli is returned for warming through and flavor coating. The stir-fry is served alongside cooked rice, integrating the savory and lightly sweet flavors throughout the dish.

Ingredients can be varied to include other vegetables or swapped for ground turkey or chicken as alternatives. Frozen broccoli can be used after thawing and drying. The dish provides a balanced texture contrast between tender beef, crisp-tender broccoli, and soft rice.

Ingredients

Servings
  • 1 Tablespoon peanut oil can sub vegetable or olive
  • 3 cups broccoli washed and patted dry, florets
  • 1 lb. ground beef
  • 1 yellow onion diced
  • 1 red bell pepper sliced
  • salt to taste, or white pepper

Sauce

  • 2 Tablespoons cornstarch + 2 tablespoons cold water
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 3 tablespoons brown sugar packed
  • 1-2 tablespoons honey
  • 2 cloves garlic minced
  • 1/2 teaspoon ground ginger
  • 1 teaspoon sesame oil toasted

For Serving

  • 3 cups rice any kind, cooked

Instructions

Prep Work

  1. Combine cornstarch + 2 Tablespoons water in a covered container and shake to combine. Place in a cool location.
  2. Combine remaining sauce ingredients in a medium bowl and set aside. *Start with 1 tablespoon of honey and add another at the end if desired.

Cook the Broccoli

  1. Heat the oil over medium heat. Add the broccoli and toss to coat. Cook for 4-5 minutes, until slightly softened. Remove and set aside.

Cook the Beef

  1. Season the beef with salt/white pepper if desired. Cook and crumble the ground beef and diced onions over medium-high heat until browned and cooked through. Drain grease. Add sliced bell peppers and cook for 1 minute.

Add the Sauce

  1. Add sauce mixture and bring to a boil. Let it simmer/reduce for 2-3 minutes. Shake the cornstarch mixture, then slowly stir it into the sauce. Let it continue to bubble gently until desired thickness is obtained.

Add the Broccoli Back

  1. Reduce heat to low. Add broccoli back and stir to combine and heat through. Garnish with green onions and serve over rice! *See notes for my process on making perfectly cooked, flavorful rice.

Notes

  • You may substitute ground turkey or chicken for ground beef as desired.
  • Frozen broccoli works well if thawed and patted dry before cooking.
  • Additional vegetables like carrots, water chestnuts, celery, or kale can be included.
  • Suggested toppings include green onions, chopped peanuts, sesame seeds, or crunchy noodles.
  • For lower sodium, opt for low-sodium soy sauce and broth brands.
  • Cook rice by boiling 2 cups water with rice, simmer 15 minutes covered, then rest 10 minutes off heat for best results.
