Ground Beef Stroganoff (Hamburger)
Description
This Ground Beef Stroganoff recipe starts by browning lean ground beef with diced onion and minced garlic to build flavor. Sliced mushrooms are cooked briefly before stirring in flour to thicken the sauce. Beef broth and Worcestershire sauce are added and simmered to meld flavors and reduce slightly. Once removed from heat, sour cream is gently folded in, avoiding boiling to prevent curdling and preserve creaminess. Fresh parsley adds color and freshness. The saucy mixture is served hot over cooked egg noodles, making a filling meal with layered savory and creamy notes.
Be sure to use regular beef broth rather than low sodium for optimum taste, and fresh mushrooms are recommended but canned can be used if necessary. Substituting Greek yogurt for sour cream is possible for a different tang. For a thicker sauce, cornstarch slurry may be added gradually during simmering. Variations include adding Dijon mustard, thyme, bacon, smoked paprika, or hot sauce for extra flavor layers.
Ingredients
- 1 pound ground beef lean
- 1 small onion diced
- 1 clove garlic minced
- 12 ounces mushrooms sliced
- 3 tablespoons all-purpose flour
- 2 cups beef broth see note
- 2 teaspoons Worcestershire sauce
- salt to taste
- black pepper to taste
- ¾ cup sour cream
- 2 tablespoons parsley chopped, fresh
Instructions
- Brown ground beef, onion and garlic (trying not to break it up too much) in a pan until no pink remains. Drain fat.
- Add sliced mushrooms and cook 2-3 minutes. Stir in flour and cook 1 more minute.
- Add broth, Worcestershire sauce, salt, & pepper and bring to a boil. Reduce heat and simmer on low 10 minutes. Cook egg noodles according to package directions.
- Remove beef mixture from the heat, stir in sour cream and parsley.
- Serve over egg noodles.
Notes
- Use regular or condensed beef broth for richer flavor rather than low sodium options.
- Ground beef is preferred for flavor; add beef bouillon if substituting with other ground meats.
- Fresh mushrooms are best, but canned can be a substitute if needed.
- To avoid curdling, remove the sauce from heat before stirring in sour cream; Greek yogurt can replace sour cream.
- For thicker sauce, add a cornstarch and cold water slurry gradually while stirring.
- Optional flavor variations include Dijon mustard, fresh or dried thyme, raw bacon, smoked paprika, or hot sauce.
