Ground Chicken Chili
Description
Ground Chicken Chili is cooked by sautéing onion and red bell pepper before adding garlic and breaking up ground chicken until browned. Kidney beans and aromatic spices like cumin, coriander, oregano, chili powder, and smoked paprika are added along with canned chopped tomatoes, chicken stock, and a splash of balsamic vinegar. The mixture is simmered uncovered to thicken and deepen in flavor.
The chili’s flavor balances the savory richness of chicken and beans with warm spices and a subtle acidity from the vinegar, making the dish hearty but not overwhelming. The ground chicken offers a lighter protein option, while the beans add texture and fiber. The chili powder and smoked paprika contribute mild heat and smoky notes, which can be adjusted.
This chili can be served on its own or with toppings such as sour cream, cheese, green onions, avocado, or alongside tortilla chips and cornbread. It’s suitable for lunches or dinners where a warming and filling meal is desired.
Variations include replacing ground chicken with turkey, swapping kidney beans with other types, and adding heat with cayenne or jalapeños. Cooking spray can substitute the oil to reduce fat, and the chili keeps well for leftovers.
