Ground Pork Slow Cooker Casserole Recipe

Ingredients

Servings
  • 1 pound ground pork
  • 1 tablespoon olive oil
  • 2 ½ cups chicken broth Can also use Vegetable or Beef broth or stock, or stock
  • 1 carrot about 1 to 1 ½ cups diced, large, diced
  • 4 scallion green onions, sliced
  • 2 Tablespoons tomato paste
  • 2 cloves garlic minced
  • 1 teaspoon oregano dried
  • 2 teaspoons paprika sweet or smoked
  • 1 teaspoon cumin ground
  • 1 teaspoon salt
  • 1 teaspoon black pepper ground
  • ½ cup cream cheese
  • ¼ cup mayonnaise or sour cream
  • 1 cup white rice long grain, uncooked
  • 1 cup cheddar cheese shredded, optional

Instructions

  1. Slice the scallions. Mince the garlic. Dice the carrot.
  2. Preheat a skillet or frying pan over medium-high heat. Add the olive oil and ground pork. Break up the meat with a spatula so that you get an even layer. Let the pork get browned for about 3-4 minutes. Stir to really break up the pieces and so that it browns on all sides and cook for another 3-4 minutes. Transfer the pork to the slow cooker insert.
  3. To the slow cooker insert pot with the pork, add the rice, chicken broth, tomato paste, oregano, paprika, cumin, salt, pepper, scallions (reserve 1 tablespoon for garnish), garlic, and carrots. Stir the ingredients together. Make sure that the rice is mixed in and completely submerged in liquid. Cover the slow cooker and set on high for 4 hours.
  4. In a bowl, add the softened cream cheese and mayonnaise. Whip together with a whisk or in a food processor.
  5. When the slow cooker is done, mix in the cream cheese mixture. You can optionally add shredded cheddar cheese on top and cover to let it melt.
  6. Serve and garnish with scallions. Enjoy!

Notes

  • FREEZING: To freeze this Ground Pork casserole recipe, you will first cool it in the refrigerator. Once it is cooled, you can portion it out into 1-2 freezer-safe airtight containers or into freezer bags to freeze. Store in the freezer for up 9 months. When ready to enjoy, thaw it in the fridge for 24 hours before reheating it. Then reheat it in the microwave or in the oven at 350 F degrees for 20-30 minutes until hot in the center.
  • OTHER GROUND MEAT:  You can use any ground meat you want for this casserole recipe! Follow the instructions the same instructions for all types.
  • VEGETARIAN VERSION:  To make this vegetarian you need to replace the chicken broth with vegetable broth and swap out the pork and replace it with something else. Here are some ideas...diced sweet potatoes, black beans, pinto beans, white or red kidney beans, cauliflower, or just add a variety of veggies.
