Ground Turkey Sloppy Joes

Ground Turkey Sloppy Joes offer a savory sandwich filling made from seasoned ground turkey, cooked with onion and green pepper, then simmered in a tangy sauce blending ketchup, barbecue sauce, tomato paste, vinegar, and spices. The mixture is served hot on toasted buns for a satisfying meal with a balance of sweetness, acidity, and mild heat.

Description

The recipe toasts sandwich buns first in a hot skillet with vegetable oil until golden, which adds texture and prevents sogginess when filled. Ground turkey is cooked with minced onion and green bell pepper until browned and softened. The sauce includes chili powder, garlic powder, salt, black pepper, brown mustard, ketchup, barbecue sauce, tomato paste, granulated sugar, apple cider vinegar, Worcestershire sauce, and water blended together and stirred in to coat the turkey mixture.

Simmering the sauce reduces it to the desired consistency, leaving the mixture moist but not runny. The finished filling has a thick, saucy texture that clings to toasted buns. This sandwich suits hearty lunches or casual dinners.

Watching the sauce’s thickness while simmering is important to achieve a balance between too dry and too liquid. The suggested consistency is one that leaves a temporary trail when stirred but slowly covers over again. Toasting the buns adds flavor and prevents them from becoming soggy from the saucy filling.

Ingredients

Servings
  • 1 Tbsp vegetable oil
  • 1 lb ground turkey (I like the flavor of 93/7)
  • 1/2 large yellow onion minced
  • 1/3 large green bell pepper minced
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 Tbsp brown mustard regular mustard can be substituted, spicy
  • 1/2 cup ketchup
  • 1/3 cup barbecue sauce
  • 3 Tbsp tomato paste
  • 1 Tbsp granulated sugar more or less, to taste
  • 1 Tbsp apple cider vinegar
  • 1 tsp Worcestershire sauce
  • 1/2 cup water

Instructions

Toast Buns

  1. Heat a large skillet over MED HIGH/HIGH heat. Add a drizzle of vegetable oil, and once hot, add buns, cut side down. Cook for 30 seconds to a minute (this time will vary), or until golden brown on the bottoms.
  2. Remove to a wire cooling rack, cut sides up.

Cook Meat and Vegetables

  1. Heat oil in large skillet over MED-HIGH heat.  Add turkey, onion and bell pepper and cook, breaking apart into crumbles as it cooks, about 5 minutes, or until turkey is cooked through and vegetables are beginning to soften.  Transfer to colander to drain.

Add Sauce

  1. Add chili powder, garlic powder, salt, pepper, mustard, ketchup, barbecue sauce, tomato paste, sugar, vinegar, Worcestershire sauce and water and stir well to combine.

Simmer and Serve

  1. Reduce heat to MED/MED LOW and cook for 10-15 minutes, until mixture has thickened to your liking, stirring often.  Remove from heat and serve over toasted buns.

Notes

  • Toast buns in oil just until golden brown to improve texture and prevent sogginess under the moist filling.
  • Monitor the sauce while simmering to achieve a balanced consistency—not too dry or too runny.
  • Measure calories without including buns, as bun choices vary and affect nutritional content.
