Description

In this recipe, bell peppers are trimmed and cored to serve as vessels for the filling. The cooked rice and half the pasta sauce are mixed in to combine flavors and bind the filling.

The seasoned filling is spooned into each pepper. The baking dish is prepared with a mixture of remaining sauce and water to keep the peppers moist during baking. The peppers are topped with mozzarella cheese and baked at 375°F until cooked through and cheese has melted.

  • 6 bell pepper
  • 1 lb ground turkey
  • 1 yellow onion large
  • 1 lb mushrooms
  • 2 cups rice cooked
  • 25 oz Italian pasta sauce
  • 1 cup mozzarella cheese
  • 1 tsp neutral cooking oil for cooking, generic cooking oil
  • 1 tbsp salt adjust to taste
  • 1 tsp black pepper adjsut to taste

Instructions

  1. Trim the bell peppers by removing the seeds and core.
  2. In a pan, preheated with oil over medium-heat, saute the onion with mushrooms until they turn golden brown. Add the ground turkey, breaking up the meat with your spatula as you brown it.
  3. Add in cooked rice and half of the sauce. Stir to combine and season with salt and pepper to taste.
  4. Stuff each pepper with the filling. Combine the rest of the sauce with two cups of water and pour it on the bottom of the baking dish. Place peppers into the baking dish and top each one with cheese. Bake at 375°F for 40 minutes. 
  5. Serve warm and enjoy!
