This Grouper Reuben Sandwich is a fun twist on a classic recipe. If you enjoy seafood then this is the recipe that you want to make ASAP!

Ingredients
- 2 oz grouper fillets or you can substitute your favorite white fish
- pinch salt
- ½ tablespoon olive oil
Sauce Ingredients
- ¼ cup mayo
- 2 green onions, sliced
- ⅛ cup red onion, diced
- 1 tablespoon sweet pickle relish
- 1 teaspoon horseradish
- 1 tablespoon ketchup
- ½ teaspoon salt
- ¼ teaspoon paprika
Reuben Ingredients
- 4 lices rye bread
- ½ cup Sauerkraut
- 2 lices Swiss cheese
- 2 tablespoons butter
Instructions
- Get out and measure your ingredients.
- Place oven rack to about 4" away from the broiler. Preheat broiler to high (550ºF).
- Place grouper filets in a greased casserole dish.
- Prepare grouper by brushing it with a half tablespoon of oil. Evenly sprinkle salt over filets. Place casserole dish in oven.
- Cook grouper filets for 9 minutes or until fish is opaque and the edges begin to brown. DO NOT FLIP.
Sauce Instructions
- Combine all ingredients in a medium mixing bowl.
- Depending on your preference, you could add more salt or horseradish to alter the flavor.
- Stir until blended.
Assembly Instructions
- At your workstation place your slices of bread.
- Add butter.
- Add sauce.
- Swiss cheese.
- Sauerkraut.
- Grouper filet and remaining slice of bread. Close sandwich.
- Generously butter the top and bottom of each sandwich. Heat a pan over medium heat. Add sandwiches.
- Grill on each side for about 2 minutes or until they are golden brown and cheese is melted.
- Serve immediately. Enjoy every bite!
