Description

This Guacamole recipe starts by mashing finely chopped onion, jalapeño chili, salt, and coriander into a juicy paste, which is then mixed with ripe avocado and additional coriander to reach the desired consistency. Lime juice adds brightness and acidity, balancing the richness of the avocado, while the chili brings mild heat which can be adjusted to taste.

Optional peeled, deseeded, and chopped tomato helps introduce a fresh, slightly sweet contrast and adds texture. The guacamole is typically served as a dip alongside corn chips, making a classic Mexican appetizer or snack.

For best results, use very ripe avocados. Prepare the onion-chili-coriander paste ahead of time for faster assembly. This dip is best enjoyed fresh but can be stored in an airtight container with a thin layer of water or olive oil on top to prevent browning for up to two days.

Servings
  • 2 tbsp onion or red, brown or yellow, finely chopped; white onion
  • 1 tbsp jalapeno chili or other chilli of choice) (adjust to taste, or serrano chili; finely chopped
  • 1/2 tsp salt , plus more to taste
  • 1/4 cup Coriander leaves or cilantro leaves; roughly chopped
  • 2 avocado Note 1, medium or 1 very large
  • lime juice , to taste (I use 1/4 - 1/2 lime)
  • tomato peeled, deseeded and chopped, optional; ripe

Instructions

  1. Place the onion, jalapeño, salt and half the coriander on a cutting board and use a fork to mash until juicy. OR do this in a mortar and pestle - grind into a paste.
  2. Scrape into a bowl, add avocado and remaining coriander, and mash to desired consistency.
  3. Do a taste test then adjust to your taste: salt, lime juice for sour, more chilli for spiciness.
  4. If using tomatoes, stir through.
  5. Serve with corn chips!

Notes

  • Use super ripe avocados for the creamiest guacamole.
  • Store guacamole in an airtight container with a thin layer of water or olive oil on top to keep it green up to 2 days.
  • Prepare the onion-chili-coriander paste in advance to streamline assembly when ready to serve.
  • Adjust chili and lime juice amounts based on your preferred level of spiciness and acidity.
