Guacamole Deviled Eggs

Take your deviled eggs to the next level with a guacamole twist. Creamy, flavorful, and irresistible, these eggs are a crowd-pleaser.

Ingredients

  • 6 x-large egg shells removed, hard boiled
  • 1/2 cup avocado mashed
  • 1 tsp lemon juice more to taste, fresh
  • 1-2 Tbsp mayonnaise depending on how stiff your mixture is
  • salt start with a pinch, or garlic salt, to taste

garnish

  • chives snipped

Instructions

  1. Slice each egg in half lengthwise, and pop out the yolks.
  2. Mix the freshly mashed avocado with lemon juice to prevent browning.
  3. Put the yolks, mayo, and avocado in a small bowl and use an immersion blender to blend the mixture until smooth and creamy. Alternatively you can blend the mixture in a small food processor, scraping down the sides of the machine as necessary. Season with salt or garlic salt to taste. Add more lemon if you like.
  4. Fit a pastry bag with a large star tip and fill the bag with the mixture.
  5. Pipe the filling into the hollowed out egg halves.
  6. Garnish with snipped chives.

Notes

  •  
  • How about a sprinkle of crumbled bacon on top instead of the chives?  Yum.  Or try finely minced jalapeños.
  • Not a guac fan?  Try adding an equal amount of hummus.
