Guinness Battered Onion Rings

Guinness Battered Onion Rings are thickly sliced onions dipped in a thick batter made from all-purpose flour and Guinness stout, then fried to a crisp golden brown. Served hot with a spiced mayonnaise sauce, these onion rings combine a crispy texture with a flavorful beer-infused batter and a tangy, mildly spicy dipping sauce.

Description

This recipe uses thickly sliced onions coated in a batter of flour and Guinness stout which creates a thick, pancake-like consistency ideal for frying. The onion rings are fried in hot vegetable oil at 350°F until golden and crisp, ensuring a crunchy exterior that complements the tender onion inside.

The accompanying sauce blends mayonnaise with curry powder, cayenne pepper, turmeric, black pepper, and salt for a creamy, spiced dip that adds warmth and depth to the fried rings. The preparation yields a dish with a balance of bitter malt notes from the beer in the batter paired with the aromatic spices of the sauce.

Onion rings are best served immediately hot for maximum crispness. Reheating leftover rings can be done in a 350°F oven on a baking sheet for about 10 minutes, which helps restore some crunch but is still recommended to be done the next day at most.

Ingredients

Servings
  • vegetable oil for frying
  • 4 onion peeled and thickly sliced
  • 2 cups all-purpose flour
  • 1 pint Guinness Stout

sauce

  • 1/2 cup mayonnaise
  • 1 tsp curry powder
  • 1/2 tsp cayenne pepper powder
  • 1/2 tsp Turmeric
  • salt to taste
  • black pepper to taste

Instructions

  1. Put about 6 inches of oil in a medium sized pot and heat over medium high heat until the temperature reaches 350F
  2. Put the flour in a bowl and whisk in enough Guinness to make a mixture similar to a thick pancake batter.
  3. When the oil has reached 350F, work in batches and dip the onion rings into the batter, and then into the oil. Fry, flipping them once or twice, for about 2 minutes, or until golden and crispy. Drain on paper towels. You can keep the rings warm in a low oven if you like, while you finish the rest.
  4. Stir the sauce ingredients together and taste to adjust any of them. Set aside until needed.
  5. Serve the onion rings piping hot, with the sauce.

Notes

  • Onion rings are best enjoyed immediately after frying for optimal crispiness.
  • If reheating leftovers, warm on a baking sheet in a 350°F oven for about 10 minutes.
  • Do not store and reheat multiple times as the texture and flavor degrade quickly.
