Ingredients

  • 1 tbsp olive oil
  • 1 cup long grain white rice
  • 1/2 yellow onion diced
  • 2 garlic minced, cloves
  • 1/2 tbsp habanero pepper minced
  • 2 tbsp butter
  • 1/4 tsp ground coriander
  • 1/2 tsp salt
  • black pepper to taste
  • 2 cups chicken broth or vegetable broth

Instructions

  1. Add oil and rice to a small sauce pan. Sauté on medium to medium-high heat for 3-5 minutes, stirring often so the rice doesn't burn. (Don't skip the step of toasting the rice, it's essential)
  2. Once the rice starts to turn golden, add the onion, garlic, and habanero and sauté for a minute, don't burn the rice! Then add the butter, coriander, salt, several grinds of black pepper, and the broth. Stir to make sure everything is combined and turn the heat to high. Once everything comes to a boil, reduce the heat to low, put the lid on and simmer for 18 minutes.
  3. Feel free to garnish with fresh cilantro. Enjoy!

Notes

  • Toasting the rice before cooking is essential to achieve the recipe’s distinct texture and flavor.
  • The rice is not rinsed before toasting, as the dry sautéing prepares it properly.
