Halloween Brownies

Cute monster Halloween brownies, these chocolate glazed brownies are a perfect Halloween treat for the kids.

Ingredients

Servings

Brownies:

  • 1 cup butter 240 g, unsalted
  • ¾ cup brown sugar 135 g
  • 1 cup white sugar 200 g
  • 4 egg large
  • 2 teaspoons vanilla extract pure
  • ½ teaspoon salt fine sea salt
  • cup all-purpose flour 150 g
  • 1⅛ cup unsweetened cocoa powder 115 g

Chocolate glaze:

  • ½ cup semi-sweet or dark chocolate, chopped, 85 g, Note 1
  • ¼ cup heavy cream 60 ml
  • 2 tablespoons butter room temperature, 30 g, unsalted

Decorate cookies:

  • 12 cookies Note 2, small, chocolate covered
  • monster eyeballs made of sugar, small, 24 count
  • red gummy spaghetti 1-2 pieces
  • decorating gel white, pen/tube

Instructions

Brownies:

  1. Preheat the oven to 180 degrees Celsius/ 350°F/ 180°C. Line a square baking tin of about 23 - 24 cm/ 9 - 9.5 inches with parchment paper.
  2. Melt the butter in a small pan. Pour the butter into a mixing bowl and add white and brown sugar, eggs, vanilla extract, and salt. Whisk for about 2 minutes until the mixture is paler and fluffier.
  3. Batter: In another bowl, mix the flour, unsweetened cocoa powder, and baking powder. Sift them over the butter and sugar mixture. Fold the dry ingredients into the wet until just combined, don't overmix. Pour the batter into the prepared pan.
  4. Bake brownies for 30-35 minutes until just set to the touch. Don't overbake. Let the brownies cool in the pan for about 20 minutes.
  5. Remove from the pan and let cool completely on a wire rack. Only decorate when completely cooled.

Chocolate glaze:

  1. Chop the chocolate and set it aside.
  2. Heat cream: Pour the heavy cream into a small pan. Bring to a boil, then remove from heat.
  3. Add the chopped butter and the chocolate. Stir well until the chocolate is completely melted and the glaze is smooth and shiny.
  4. Cut the edges of the brownies so that the squares will all look nice and regular. Cut the brownie squares.
  5. Glaze each square individually, letting a little of the glaze drip down the sides of the brownies.
  6. Decorate: Stick the decorated monster chocolate cookies on each square.

Monster cookies:

  1. Stick two eyeballs on each of the chocolate cookies with the help of the white decorating pen/gel tube or a little chocolate glaze. Cut the gummy spaghetti into small pieces and stick them on the cookies to look like a smiling or sad mouth.
  2. Teeth: Use the decorating gel tube to paint the teeth on the monster cookies.
  3. Stick the cookies on the glazed brownies.
  4. Let the glaze set slightly before serving the Halloween brownies.

Notes

  • Chocolate: Whichever you like best, a mixture of the two is fine as well.
  • Cookies with a diameter of about 3.5 cm/ 1.4 inches.
