These monster eye ball cookies are an easy Halloween treat that the kids will love!

Ingredients
Ingredients for no bake method;
- 24 chocolate cookies
- 1 cup (280g) chocolate icing
- 24 Candy eyes
Ingredients for baking method;
- 1 box chocolate cake mix
- 2 eggs
- 1/3 cup (78ml) oil
- ½ cup (120g) flour
- 1 cup (280g) chocolate icing
- 24 Candy eyes
Instructions
Instructions for no bake method;
- Lay 24 cookies out on a tray.
- Pipe icing onto one cookie and place a second cookie on top to create your cookie sandwich. Repeat until all done.
- Stick 2 candy eyeballs on the icing of each cookie sandwich and serve.
Instructions for baking method;
- Preheat the oven to 350F / 180C / gas 4 and line a baking sheet with parchment paper.
- In a mixing bowl, combine cake mix, eggs, oil and flour into a thick batter.
- Shape dough into balls and place on the baking sheet.
- Bake for 6-8 minutes, or until the cookies have cracks in the top.
- Remove cookies from the oven and let cool fully on a cooling rack.
- Pipe icing onto one cookie and place a second cookie on top to create your cookie sandwich. Repeat until all done.
- Stick 2 eyeballs on the icing of each cookie sandwich and serve.
Notes
- Place your cookie sandwiches in the refrigerator for 30-60 minutes to firm up the icing. This stops it from oozing out when eating.
- You don't need to pipe, you can just spread the icing but it will not look as neat. That's okay though.
- Feel free to double up the icing for a luxurious cookie.
- For fun, you could cut out shapes like stars, etc. from the cookie dough before baking.
