These Blueberry Eyeball Smoothie Bowls are made with just 3 nutritious ingredients and topped with lychee "eyeballs."

Ingredients
- 2 cups fresh or frozen blueberries plus 4 blueberries for eyeballs
- 1 banana frozen
- ⅓-1/2 cup apple juice
- 4 lychees drained (from a can)
Instructions
- Puree the blueberries, banana and apple juice together in a blender until smooth. Add more apple juice as needed to get a thick consistency.
- To make the eyeballs, place one blueberry in the center of each lychee.
- Pour the blueberry smoothie into two bowls and top each bowl with two eyeballs.
Notes
- Canned lychees can be found in the Asian food section of many grocery stores. If you can’t find them, you can substitute honeydew melon.
