Instructions

  1. Finely chop the onion, celery, and garlic.
  2. Heat the olive oil in a small skillet/frying pan over medium heat.
  3. Add the chopped vegetables, salt, and Italian seasoning to the pan, cook over medium heat for 5 minutes until softened.
  4. Once cooked transfer to a bowl to cool.
  5. Whilst the onion mixture is cooling, remove the meat from the pork sausages/breakfast links and break up with a fork.
  6. Add the cooled onion mixture to the sausage meat and mix together well (I use my hands)
  7. Cut 12 large disks from your pie crust and use them to line an ungreased 12 hole muffin tin. Gather up the scraps to ensure you have enough pastry for the tops.
  8. Fill eat pie with sausage mixture and then top with 1 teaspoon of tomato sauce/ketchup.
  9. Cut 12 smaller disks from the remaining piecrust/pastry.
  10. Use a knife to cut spooky or funny Halloween faces from the disks.
  11. Cover your pies with the lids and carefully push the edges together.
  12. Break the egg into a small bowl, whisk lightly together, then use a pastry brush to give the pies an egg wash.
  13. Bake for 25 minutes until golden brown.
