Halloween Sugar Cookies

Halloween Sugar Cookies combine chilled, salted butter and granulated sugar creamed until fluffy, enriched with egg and vanilla extract. The dough is chilled then rolled and cut into festive Halloween shapes, baked until just golden at the edges for a tender, buttery cookie. Royal icing made from powdered sugar, meringue powder, vanilla, and water is used to decorate the cooled cookies with bright colors and Halloween-themed designs.

Description

These Halloween Sugar Cookies start with a traditional sugar cookie dough made by creaming butter and sugar, then adding eggs and vanilla. Flour, salt, and baking powder are mixed in just until combined to keep the dough tender. Chilling the dough makes it easier to roll out and prevents spreading during baking.

The dough is rolled to a 1/4-inch thickness, cut into holiday-themed shapes, and baked at a moderate temperature until the edges show a slight golden hue while the center remains soft. Once cooled, the cookies are decorated with royal icing that combines powdered sugar, meringue powder, water, and vanilla, thinned to the desired consistency and colored with gel food coloring. This icing hardens to give detailed, smooth decoration that adheres well to the cookie surface.

These cookies are well-suited for Halloween parties or gift giving, allowing for creative designs in orange, black, purple, and other seasonal colors. They can be made in advance and decorated on the day of use for fresh appearance.

Ingredients

Servings

Cookies

  • 1 1/4 cups butter cut into 1/2" pieces, chilled, salted
  • 1 1/4 cups granulated sugar
  • 1 egg large
  • 1 egg large, yolk
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking powder

Royal Icing

  • 1 pound powdered sugar about 4 cups
  • 1/4 cup meringue powder
  • 6-8 Tablespoons water plus more as needed for thinning out the icing
  • 1 teaspoon vanilla
  • Gel food coloring

Instructions

Cookies

  1. In a large bowl of a stand mixer fitted with a paddle attachment, mix the butter and sugar on high speed for about 3 minutes until well combined.
  2. Add the egg, egg yolk, and vanilla and mix well, scraping down the sides of the bowl.
  3. Add in the flour, salt, and baking powder on low speed, mixing just until incorporated and the dough comes together. Shape the dough into a flat disk and wrap tightly in plastic wrap. Chill for 1-2 hours or up to 3-4 days in the refrigerator.
  4. When ready to bake, heat the oven to 325° F. Remove the dough from the fridge and let it sit on the counter for 10 minutes to soften slightly.
  5. On a lightly floured surface, roll out the cookie dough to 1/4-inch thick. Cut out using Halloween-shaped cookie cutters and bake on a baking sheet lined with a parchment paper for 12 to 15 minutes, until the edges just barely start to turn golden. Cool completely before decorating.

Royal Icing

  1. In a large bowl of a stand mixer, whisk together the meringue powder and powdered sugar, then slowly mix in the water and vanilla. Increase speed to medium and beat until stiff peaks form, around 5 minutes.
  2. Divide the icing into individual bowls for each color and add gel food coloring, a few drops at a time, mixing well until you achieve your desired shades. From there, you can reserve half of each color at a thicker consistency for piping borders, or thin all the icing to flood consistency.
  3. To thin each color to flood consistency, add 1 teaspoon of water at a time and stir well, continuing to add water as needed until the icing is about the same consistency as honey or shampoo and melts into itself within about 5-10 seconds.
  4. Transfer the icing to piping bags fitted with small piping tips or just snip off the end. Decorate the cookies by first outlining the border, then filling in the middle with flood icing. Use a toothpick or scribe tool to fill in any gaps by spreading the icing around, then tap the cookie on the counter a few times to help the icing settle into a smooth, even layer.
  5. Dry cookies at room temperature for 6-8 hours until the royal icing is completely firm before adding additional layers to the design or stacking or freezing the cookies.
