Ham and Asparagus Crustless Quiche Recipe

The Ham and Asparagus Crustless Quiche combines eggs, milk, shredded cheddar cheese, chopped ham, and fresh asparagus for a savory, protein-rich dish without a pastry crust. Baked until set, it has a tender custard texture with a mix of smoky ham and fresh asparagus flavors, ideal for brunch or a light meal.

Description

This crustless quiche blends beaten eggs and milk with shredded cheddar cheese and diced ham to create a rich, savory base. Chopped asparagus is spread on top before baking, adding fresh vegetable texture and flavor. The recipe is baked in a sprayed pie plate until the center firms while retaining a moist custard consistency.

The quiche features the softness of baked eggs with pockets of melted cheese and bits of ham, balancing indulgence with green vegetable notes from asparagus. Its crustless nature reduces prep time and carbohydrate content.

Serve warm or at room temperature, making it a flexible dish for breakfast, brunch, or light dinners. Pairing it with a simple salad complements its flavors well.

Using thin asparagus provides better texture within the quiche. Cooling briefly before slicing helps achieve clean pieces and maintains structure.

Ingredients

Servings
  • 6 large egg
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper ground
  • 1/2 cup cheddar cheese shredded
  • 1/2 cup (4 oz.) ham -chopped
  • 1 cup asparagus -chopped (2-3 inch pieces)

Instructions

  1. Preheat oven to 350 degrees F.  Spray a 9 inch pie plate with cooking spray.
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  3. Stir in the cheese and ham.
  4. Pour the mixture into the pie plate. Push the ham around to make sure that it is evenly distributed throughout the dish.
  5. Spread the asparagus out evenly over the top of the egg mixture.
  6. Bake for 30 minutes, or until the center is set. Let cool at least 2 minutes before slicing.

Notes

  • Thinner asparagus slices are preferred as they cook evenly without becoming tough in the quiche.
