Ham and Asparagus Quiche

Ham and Asparagus Quiche consists of a savory egg custard mixed with chopped ham, fresh asparagus, and shredded Swiss cheese, baked in a flaky pie crust. The quiche filling blends richness from eggs and half and half with the freshness of asparagus, balanced by smoky ham and nutty cheese. The crust provides a crisp, buttery base that holds the soft filling, making for a well-textured, satisfying dish suitable for breakfast, brunch, or light meals.

Description

This quiche starts with a homemade or store-bought pie crust pressed into a tart pan and chilled before baking. The filling is prepared by whisking large eggs with half and half to achieve a creamy base. Chopped ham, chopped asparagus, shredded Swiss cheese, and salt are folded into the egg mixture, creating a gentle savory blend. The filling is poured into the chilled crust and baked at 350°F until the custard sets and the crust turns golden, ensuring a nicely cooked center without jiggle.

The finished quiche offers the tender bite of asparagus melded with the saltiness of ham and the mild, creamy flavor of Swiss cheese within a crisp crust. It works well for brunches, light lunches, or as a versatile dish that can be served warm or at room temperature.

You can substitute vegetables such as mushrooms, bell pepper, zucchini, or broccoli if asparagus is unavailable. For those avoiding pork, turkey deli meat or omitting meat altogether with extra vegetables are viable alternatives. Using a store-bought crust simplifies preparation without compromising the result.

  • 3/4 cup half and half

  • 1 cup asparagus chopped
  • 1 cup ham chopped
  • 1/2 teaspoon kosher salt
  • 1 pie crust you can make your own pastry dough or buy prepared crust at the grocery, unbaked

Pie Crust:

  • 1 1/3 cups flour
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon sugar
  • 1/2 cup butter cubed and cold
  • 2-3 tablespoons water

Instructions

  1. Preheat oven to 350° F.
  2. In a bowl, whisk together the eggs and milk, then stir in the remaining ingredients.
  3. Place the dough into a pie or tart pan and mold into the shape of the dish. Place the pie crust in the freezer for 10 minutes to chill.
  4. Pour the filling into the well-chilled pie crust, and bake for 50 minutes or until golden and cooked through (the center shouldn’t jiggle).
  5. Cool and serve.

Pie Crust:

  1. Place the first 3 ingredients in a food processor and pulse.
  2. Add cold butter and using on/off turns, process until coarse meals forms.
  3. Add the water 1 tbsp at a time and process until moist clumps form, adding more water 1 tsp at a time if mixture is dry.
  4. Form dough into a disk, wrap in parchment paper or plastic wrap and refrigerate 1 hour or until cold.

Notes

  • A prepared pie crust can be used instead of making dough from scratch without changing the dish's quality.
  • Substitute asparagus with other vegetables like mushrooms, bell peppers, zucchini, or broccoli to suit your preference.
  • Ham can be replaced with turkey deli meat or omitted entirely for a vegetarian variation by increasing the vegetable portion.
