Ham and Bean Soup

Comforting ham and bean soup is a classic and hearty soup. It's loaded with creamy white beans, smoky ham, and tender veggies. It's the perfect soup for using up your leftover ham and super easy to make on those busy weeknights.

Ingredients

  • 2 tablespoons butter
  • 1/2 cup onion diced
  • 1 cup carrot peeled and diced
  • 1/2 cup celery diced
  • 2 garlic minced, cloves
  • 1 1/2 tablespoons all-purpose flour
  • 4 cups chicken broth low-sodium
  • 3 canned white beans drained and rinsed, 15 ounce
  • 2 cups ham cubed or shredded, cooked
  • 1 bay leaf
  • 1 teaspoon thyme dried
  • 1/2 teaspoon black pepper
  • salt if needed, to taste
  • thyme for garnish, fresh

Instructions

  1. In a large pot, heat 2 tablespoons butter over medium heat. Add the 1/2 cup onion, 1 cup carrot, and 1/2 cup celery, and cook until tender. Add 2 garlic cloves, and cook for 30 seconds.
  2. Sprinkle 1 1/2 tablespoons all-purpose flour over the cooked veggies and stir to combine.
  3. Add in 4 cups low-sodium chicken broth, 3 (15 ounce) canned white beans,, 2 cups cooked ham, 1 bay leaf, 1 teaspoon dried thyme, and 1/2 teaspoon black pepper. Stir to combine.
  4. Bring to a low boil, then reduce the heat to a simmer. Simmer for 15 to 20 minutes, stirring occasionally.
  5. Remove the bay leaf then taste and season with salt to taste, if needed.
  6. Garnish with fresh thyme and enjoy!
